Cool storage is an essential. I’ve already mentioned the need to find a good quality, well insulated cool box. It needs to be rigid and have walls at least 3cm thick. One of those floppy freebies from the supermarket just won’t do, as their thermal performance is just not up to the job. In terms of capacity, you are probably looking at 30 litres. The more densely packed the cool box, the more efficient the coolant. The more you open the box then, obviously, the sooner its going to warm up. So spend a moment or two thinking about the order in which you pack the thing, stuff that’s going to be used pretty quickly needs to be on top.
It’s also worth my while re-iterating here the fact that seafood is really best eaten on the day you bought it. Use your noodle, king prawns are not going to stay fresh the whole weekend!
